Maple Bacon Cupcakes

This is a flavour combo that you really should try. These maple bacon cupcakes consist of a cinnamon spiced cupcake, topped with a maple flavoured buttercream, crispy bacon bits and drizzled with a generous serving of Maple syrup flavoured treat, they are sure to make a great conversation starter when served at a party.

Ingredients

FOR THE CUPCAKE

  • 125g Butter (unsalted)softened
  • 125g Unrefined light muscovado sugar (we use Billington's)
  • 2 Eggs (free range) medium
  • ½ tspVanilla extract  (we use Nielsen-Massey)
  • 175g Self-raising white flour sifted (we use Allinson)
  • ½ tsp Cinnamon
  • 2 tbsp Maple syrup flavourTreat (we use Treat)

FOR THE BUTTERCREAM

  • 250g Butter (unsalted)softened
  • 500g Icing sugar  (we use Silver Spoon)
  • 2 tbsp Maple syrup flavourTreat (we use Treat)
  • 3 Bacon rasher(s)streaky bacon (more if desired)
  • Maple syrup flavour for drizzling (we use Treat)

 

The Method

STEP 1

Preheat the oven to 180℃/ 160℃ fan and line a 12 hole muffin tin with 12 cupcake cases.

STEP 2

Place the butter and sugar in a mixing bowl and beat with a wooden spoon or electric mixer until light and fluffy. Gradually beat in the eggs and vanilla extract a bit at a time until smooth, adding a little of the floour if the mixture starts to curdle.

STEP 3

Sift and fold the flour and cinnamon into the mixture before folding in the Maple flaboured Treat. Divid ethe mixture evenly between the cupcake cases and bake in the pre-heated oven for 18-20 minutes or until a skewer comes out clean. Leave to cool slightly before removing from the tin and leaving to cool fully on a wire rack.

STEP 4

To makethe buttercream, beat the butter until softened before adding the icing sugar in two parts. Add the maple syrup flavour Treat and a tablespoon of milk if required to loosen the buttercream slightly.

STEP 5

Grill the bacon until crispy and set aside to cool before cutting into 1 inch long pieces.

STEP 6

Pipe swirls or rounds of icing onto the cupcakes before adding a piece of bacon (or more if desired) Finish with a final dirzzle of maple flavour Treart before serving.

STEP 7

These cupcakes are best eaten within a few hours of making or alternatively we recommend cookin the back on the day of the desired serving.
