Everyday Cooking -  Bacon and Stilton Macaroni Cheese

Bacon and stilton Macaroni cheeseBacon and Stilton Macaroni Cheese (Feeds four)

This simple and nourishing dish is very tasty and economical


25 g butter
25 g plain flour
125 g cheddar cheese, grated
500ml milk
300 g macaroni
250 g lean back bacon
75 g blue stilton
1 cup home made breadcrumbs (See below)


1. Make a cheese sauce (See below)
2. Grill the bacon and chop it into small pieces
3. Cook the macaroni and drain in a colander.
4. Place the macaroni in an ovenproof dish
5. Add the bacon and crumbled stilton cheese to the cheese sauce then pour on to the macaroni, ensuring all the macaroni is covered.
6. Add the breadcrumbs to make a topping, then bake for 25 minutes at 170c, 400f or gas 6


* To make breadcrumbs, buy a small uncut loaf; cut into chunks and cook in a very low oven for 20 mins, then put it through a grinder/liquidiser. What you don’t use will freeze beautifully

To make a cheese sauce, first gently melt the butter in a non-stick saucepan, gradually add the flour stirring all the time, then slowly stir in the milk, still stirring all the time, and finally add the grated cheddar cheese, mixing it in until it has melted. Turn off the heat.

* No extra salt has been added - the cheese and bacon make the dish salty enough.

* Extra grated cheese can be added on the top, before baking..
