salmon fish cakesSalmon Fish Cakes

This is a dish which makes for a real supper treat, and is a great use of leftover salmon, or of any cheap cuts which are on offer at the shops.

 


Ingredients:

8oz/225g cooked salmon
2 tbsp/30ml chopped fresh parsley
2 spring onions or 8 chives, trimmed and chopped
Grated rind and juice of ½ lemon
8oz/225g stiff mashed potato
1 beaten egg
Plain flour or breadcrumbs to coat.

Method:

Remove all the skin and bones from the cooked salmon then mash or flake well.
Add the parsley and onions/chives and 1 tsp of the lemon rind and season well with salt and pepper.

Gently work in the potato, shape the mixture into six rounds and chill for 20 minutes.
Before cooking coat them well in beaten egg and then dip into bread crumbs or seasoned flour.

Grill gently for around five minutes each side or fry in butter and oil until golden brown.
Serve with a salad and either chips or jacket potato.
