Recipe Inspiration from Waitrose


Here at LaterLife we have compiled some recipes in association with Waitrose for you to enjoy at home.

Why not try something different using this Month's Health Food, brussels sprouts.

The recipes are divided into three courses, so you can take your pick, and easily prepare your own meal.

Brussels sprouts with caraway seeds

  • Preparation time:10 minutes
  • Cooking time:10 minutes
  • Total time:20 minutes 20 minutes

Serves: 6


45g unsalted butter
1 x ½ tsp caraway seeds
660g brussels sprouts, trimmed and halved
4 tbsp dry vermouth


1. Melt the butter in a large frying pan over a medium heat. When the butter starts to foam, add the caraway seeds and after 30 seconds, tip in the sprouts. Season and cook, stirring regularly, for 8-10 minutes until the sprouts are golden.

2. Pour in the vermouth. Cook over a high heat, stirring, for 1-2 minutes until the liquid has evaporated, then serve.

Lemon and sage-buttered Brussels

  • Give your Brussels sprouts a make-over this Christmas with this delicious vegetarian recipe.

    • Total time:18-20 minutes

    Serves: 8


    600g fresh Brussels sprouts, trimmed and any larger ones cut with an 'X' in the base
    150g pack LOVE Life Pecans
    50g butter, softened
    1 red chilli, deseeded and finely chopped
    2 tbsp chopped sage
    Zest and juice 1/2 lemon


    1. Cooks the Brussels sprouts in boiling water for 8-10 minutes or until just tender.  Drain and return to the pan.
    2. Meanwhile, dry-fry the pecans for 1-2 minutes until golden.  Set aside.
    3. Mix together the butter, chilli, sage, lemon zest and juice.  Season well.  Stir into the hot sprouts with the toasted pecans.

    Get ahead

    A day before, trim the sprouts and make the flavoured butters.  Keep separately in the fridge.  Toast the nuts and keep covered at room temperature.  Cook and assemble on the day.

Heston's Brussels Sprouts

Recipe from Heston's happy Christmas - The great chef is sticking with tradition this year with spectacular turkey and tremendous trimmings all round - it’s the ultimate family feast.

  • Preparation time:15 minutes
  • Cooking time:10 minutes
  • Total time:25 minutes 25 minutes

Serves: 6


  • 5 smoked bacon rashers, cut into lardons
  • 50g unsalted butter
  • 400g brussels sprouts


  1. Slice the bases from the brussels sprouts and carefully separate the leaves, pulling them off the sprouts.
  2. Fry the bacon in a frying pan over a medium heat until soft but not coloured. Remove from the pan and drain on kitchen paper. Set aside.
  3. Melt the butter with the bacon fat in the frying pan over a medium to low heat. When the butter is foaming, add the brussels leaves and stir to coat them. Add 2 tbsp water and cover the pan.
  4. Allow to cook for 3 to 5 minutes, stir in the bacon and season with salt and pepper.
